Colorado beauty.


Mr. Outdoors and I are vacationing in beautiful Colorado.  The first pic is taken from out tent, what a view eh?  The second pic is from our campsite and the mountain and tress reflecting on the water is just so beautiful.  We caught a lot of trout, ate a lot too...LOL!  Magical Monday.

Squash blossoms

Zucchini blossoms!  It won't be long now till we are knee deep in squash.  Found a recipe online for zucchini pickles, can't wait to try that one. We have several ways of using the zucchinis by way of bread, cakes, breaded and fried so the pickles will be a new twist.  Picked our first tomato a couple days ago...granted it was small but hey we'll take anything we can get...btw our 42 tomato plants are loaded...fingers crossed here for having enough to can this year.  Terrific Tuesday!

Homemade noodles and bread


My Aunt Pearl taught me how to make noodles and Mr. Outdoors and I sure do enjoy them.  In my favorite kitchen store I found a rolling pin cover, looks like a sock for your rolling pin.  Keeps the dough from sticking when rolling out your pie crust or noodles and such....when done, simply wash with your tea towels and you're ready to go.  Learn something new every day...love it!  We have been enjoying bread from our bread machine...so handy and doesn't heat up the kitchen!  The best part is no preservatives!  So good toasted (enter butter and honey here) in the mornings with our tea/coffee and much cheaper to make too.

Alicia's Birthday

We celebrated this sweet girls birthday last night...28 years old and the cream puff of our family.  Our niece...ahhh to be 28 again! LOL.   Happy Birthday Alicia.

Baseball

We went and watched our great nephew play ball in Manhattan this last weekend, quite a good ball player.  Weather was hot and muggy, you always wonder why do they put them in black uniforms??!!  So hot!

busy times

Things are soooo busy around here...Mr. Outdoors is cutting hay and spraying fields and working on his buildings.  My car has been in the shop just about all week, we picked it up last evening and the problem still exists so we returned it this morning...geesh!  Hopefully we can pick it up tonite...fingers crossed here.  Going for the weekend to Topeka and Manhattan to watch a nephew play ball and see one of hubbys brothers..looking forward to it!  Son Mark leaves for Colorado tomorrow for a long deserved vacation..hope he has a ball.

Baby fawn

Mr. Outdoors taking his walk this morning happened upon this fawn in the hay meadow...so tiny!  I always feel it is such a special gift to get to see these babies in the wild.

Chile relleno


I made chile rellenos yesterday, my first try at them.  They turned out good and pretty simple to make.  Roast your pablano peppers till they are very black, cool and remove the black by hand.  The peppers are very fragile at this point, make a slit in the pepper to remove the spline and seeds.  Stuff them with cheese and roll in flour then egg and I also used the panko crumbs after the egg.  Fry in about an inch of oil and drain well, the panko isn't in the recipe I used but we like the flavor it gives.  We will be making these again, can't wait to make them for our kids and grandkids, they will like them too!
